As it stands I literally know nothing about tuning.
My car is a 02 jetta tdi 1.9 alh... I believe it comes with the edc15 bosch.
Where do I start to learn?

There are much info here and on other forums. EDC15 is one of the easiest ecus to tune imho.
Tweak SOI a bit also and you'll have great torque for that little engine
