While not as sexy as an expensive variable bench power supply, a old computer power supply can provide a well regulated and protected 12v output at 2 amps and should be readily available. On an ATX power supply, simply put a switch between the green wire and one of the black wires for a power switch then use a yellow and a black wire for +12v output.
