A week and 5 more versions later, the car is running near-optimal for the first time in seemingly forever.
Since creating a really well-working N75/requested boost map is a lot of work, I took the shortcut of using the 150HP ARL maps and modifying them slightly to suit my purposes - this has worked a lot better than me trying to fiddle with single areas in the original map.
No matter at what RPM I punch it, the hugest overboost is about 0,2 in 5th gear accelerating from all the way down (1400-1500/min), otherwise it's 0,1-0,12 above. N75 log values follow the N75 precontrol map pretty closely, too - I'm liking it a lot. Thanks for doing my work, VAG ;)
I've since modified my torque limiter to be slightly below my smoke limiter, was too high up til now to find out what air mass I could generate smoke-free. It's running very smoothly, now low-rpm shudder anymore, no "loud" areas at 1600-1800/min where it would vibrate, but the torque kick is gone - that came before when the turbo spooled up after a bit of lag, now it has no lag ;) So it "sort of feels less aggressive even though it isn't.

You can obviously use this list to grab my map addresses ;) This is for the manual coding, which is at lower addresses than the automatic one in the file - all maps in the other coding are with identical addresses for the last 4 digits, just add 2 to the first one so 5AAAA becomes 7AAAA etc.
A few notes:
I have two pump voltage maps, the default sized one and a modified longer one that I created manually. Just use the default if you're not sure what you're doing.
There is one smoke limiter and 2 "copies" which aren't actually copies but unpopulated maps for running MAP-based smoke limiter.
"Luftmassenlimiter" is a map that determines how much air mass you can use in the smoke limiter max...think about it ;) (also needs diagnostic changes to fully use it, though!)
"Ladedruck range limiter" is the same thing for boost, and I think it's used when running MAP-based smoke limiter (not 100% sure)
"Glühstifte für Kühlwasser Ansteuerung" is a map that determines when the water heater glow plugs (not the one for diesel!) should run - nicely usable to get up to 90°more quickly, along with dynamic idle.
